We also just launched our Oktoberfest menu, which features a Bavarian Pretzel, beer-braised bratwurst, and a fairly mind-blowing schnitzel.

Sounds like your experience working here was less-than-ideal. We've taken a look at a lot of policies and procedures and made a lot of adjustments in how we run our day-to-day operations. We still have the two hour time limit, but we don't enforce it if we don't have to.
As far as the culture here goes, we've really changed things for the better for our staff. The environment is now very much "Happy to be here, easy to work with", and I can only hope that our staff feels like we are truly cultivating a supportive, positive, and fun environment.
On a personal note: I've never seen a beer rebranded in the way you have described here and I have been here nearly a year.
I can't erase or change your experience, but I'd love to buy you a beer sometime if you ever feel up to it. Cheers!

If you're looking for brunch without a wait, Spice Trade Brewing Company would be happy to buy you and your friend a couple of beer flights with your meal! We've started doing brunch recently, and while we're getting busier every week, we typically have plenty of room to accommodate you.
